Tsogo Sun hosted their winter menu launch from The Atrium at the intercontinental hotel in Sandton city

Each dish was excellently put together by Chef Shimmy Sello who created a strong menu from starter all the way through to dessert.
Chef Shimmy started off the tasting with a wholesome bread basket consisting of freshly baked artisan bread complemented with a fine chicken liver paté along with a smooth herbed butter. This was followed up by the first starter; a delicious ‘Duck salad’ expertly made from confit duck leg, pomegranate, young lettuce and orange dressing. As a second starter, we were treated to a comforting ‘sweet pepper & tomato soup’ made with the finest roast sweet pepper and vine tomato topped off with a basil dressing.
With such impeccable starters, the stage was set for the main course with which Chef Shimmy has planned to hearten The Atrium’s menu throughout the cold winter season.
We were presented with our first main course which consisted of a finely seared ‘Seabass fillet’ complemented with vibrant beetroot mash, young vegetables and a tangy sauce vierge. Following the Seabass was the final act of the main course performance. ‘Springbok Shank’ combined with a slowly cooked butternut confit, roasted root vegetables and Cranberry just made for a delectable end to Shimmy’s main course.
The tasting was brought to a well rounded close with a beautiful ‘Lemon cheesecake’. This was accompanied by Italian meringue and a vivid berry salad which brought a wonderful close to Chef Shimmy’s renewed winter menu.
This winter menu, which can be experienced at The Atrium in Tsogo Sun’s Intercontinental Sandton Towers, is a satisfying and phenomenally delicious menu that will leave your heart warm throughout the coming winter months.
